Riddle to fight Ramos at UFC 141 in Las Vegas on 30 Dec 2011

Welterweight Matthew Riddle, of Allentown, will be fighting Luis Ramos at UFC 141 on Dec. 30 in Las Vegas.

Riddle attended East Stroudsburg University where he was a member of the wrestling team and was a cast member of Spike TV's The Ultimate Fighter.

During season 7 of the reality series, Riddle was credited with having the shows biggest knockout when he decked Dan Simmler in the second round of a fight.

Lesnar was last seen in action at UFC 121 in October 2010, where he lost to Cain Velasquez via first round TKO.

After recovering from a second bout of diverticulitis, Lesnar is scheduled to make his return to the UFC on December 30th when he will take on former Strikeforce heavyweight champion Overeem, with the winner earning a heavyweight title shot next year.

At time of writing, Overeem is the odds-on favourite with bookmakers to be victorious against the former WWE wrestler, despite rumours (and we must stress they were only rumours!) in Toronto on Saturday following UFC 140 suggesting he was considering pulling out of the bout.

Lesnar fights have always been big business for bookmakers and their UFC 141 bout will be no different.

It had been thought prior to odds being released that Lesnar could open up as a narrow favourite, but his lengthy spell away from the Octagon has clearly played a part in him being available at slightly longer odds than if he was coming off a fight.

Lesnar was last seen in action at UFC 121 some thirteen months ago October 2010, where he lost to Velasquez via first round TKO.

Overeem has been in awesome form over the past few years, with his last defeat coming back in 2007.
